Grilled Chicken Pesto Sandwich
Artisan bread sliced, brushed with olive oil, and grilled lightly
Grilled chicken breast brushed with pesto
Muenster cheese

Chicken Corn Chowder
1 1/2 pounds boneless chicken breasts cut into bite size pieces1/2 C. chopped onion
1 to 2 cloves garlic, minced
3 T butter
2 chicken bouillon cubes
1 C hot water
1 tsp. ground cumin
2 cups half and half ( I use skim milk sometimes too, or at least part skim)
2 C. shredded Monterey Jack cheese
1 (14 3/4 oz) can cream style corn
1 (4oz) can diced green chilies, undrained
fresh cilantro
In large saucepan brown chicken, onion, and garlic in butter. ( I usually cook my chicken in the crock pot that day so its more tender) Dissolve the bouillon in hot water. Add to pan along with cumin; bring to boil. Reduce heat, cover, and simmer 5 minutes. Add half and half, cheese, corn, chilies. Cook and stir over low heat until cheese is melted. garnish with cilantro.

Make these recipes tonight. I tasted them in real life and they were DELICIOUS. Just make sure you wear your fat pants, because you will be full, full, full (in a good way) from not being able to stop eating all that goodness.
